a breakfast favourite: no cook buckwheat cereal

Happy Friday! I have to admit, I was wishing for a snow day as I went to sleep last night (rather late) after tuning into Gabrielle Bernstein on YouTube. I love this woman. She is such an inspiration for following your passions and turning your dreams into real life.

When I returned home from rock climbing I started thinking about breakfast and realized that I have been eating the same thing almost every day for the WHOLE YEAR (…ok so we are only 20 days into the new year…). Every day I rely on a Kale Spa Smoothie or OATS. It’s time to get back in rotation, try some new grains & change up the routine. Not only is eating more exciting when we eat a variety of foods, but we are more likely to get all the nutrients our body is craving!

Raw buckwheat, you are gorgeously gluten free and delicious. Alright, so here is how it’s done for one.

1. Soak 1/4 cup raw buckwheat groats overnight in water to cover & 1tsp of ACV or a squeeze of lemon juice. Soaking with something acidic helps remove phytic acid which naturally protects grains. Digesting grains is SO much easier when they are soaked first.

2. Drain & rinse in the morning.

3. Add deliciousness to your heart’s content. Fresh or dried fruit, organic yogurt, kefir, coconut flakes, raw nuts & seeds, cinnamon, raw honey…yumm!

This morning I added a local apple, a little organic yogurt, coconut flakes, sesame seeds & cinnamon.
