oat granola love

Anyone who knows me well or looks at the current blog banner knows that if I could only eat one thing for the rest of my life it would be oats. For those wondering, carrots would be second and chocolate (well that’s already stashed in every corner of the bag that I would take with me). That being said I was getting a little bored with my oats lately. I tried different types (regular, quick and steel cut) I tried it different ways (overnight oats, raw oats with yogurt and berries, chocolate oats, etc.). I enjoyed all these ways, but still needed something different. I had been staring at granola on every aisle, but everytime I picked it up I was dissapointed with how much sugar was inside the bag! I do have a sweet tooth, but save the mounds of sugar for a delicious apple crisp :) .

So I made some of my own! I took a tip from Kris and used a mashed banana as part of the ‘liquid ingredients’. I also snuck in some veggies in the form of shredded carrot (oats and carrots, my two favourite things). I’ve been using quick oats lately rather than regular rolled oats because I can’t find ANY that are gluten free where I shop (other than one brand that is $10 for 1 kg).

So here is the recipe, but have fun with it and use whatever nuts, seeds and dried fruits you love!

2 cups quick oats

1 tsp cinnamon

1 tsp nutmeg

1/4 tsp sea salt

1 banana mashed

2 tbsp raw agave nectar (the clearer the better, you can also use raw honey or maple syrup)

1/4 cup pumpkin seeds

1/4 cup goji berries

Preheat the oven to 325 F. Mix the dry, mix the wet, mix together, place on baking sheet and bake for about 20 – 25 minutes.

Yummmmm!!!!! I just finished my granola ;) MMMM! I put almond butter as the “glue” with honey in this batch. Heaven!!

I could eat granola for breakfast lunch and dinner, I swear ;)
